  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 medium carrots, sliced
  • 3 medium potatoes, diced
  • 2 cups green beans, trimmed and cut into 1-inch pieces
  • 1 tablespoon tomato paste
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper, to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Brown the beef chunks in batches until nicely seared. Remove and set aside.
  3. In the same pot, sauté onions and garlic until translucent.
  4. Add carrots and potatoes; cook for an additional 5 minutes.
  5. Return the browned beef to the pot. Pour in beef broth and stir in tomato paste, thyme, rosemary, salt, and pepper.
  6. Add the bay leaf and bring to a boil; then reduce heat to low and let simmer covered for about 1.5 hours.
  7. After simmering, add green beans and cook for an additional 30 minutes until everything is tender.
  8. Taste for seasoning adjustments before serving; remember to remove the bay leaf.
