  • 1 ripe avocado
  • 68 cherry tomatoes
  • 1 teaspoon olive oil
  • Salt and black pepper to taste
  • 1 teaspoon sriracha, ketchup, or roasted red pepper sauce
  • Optional: Fresh basil or microgreens for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss cherry tomatoes in olive oil, salt, and black pepper. Spread them on a baking sheet and roast for 10–12 minutes until blistered.
  3. While roasting, mash the avocado in a mixing bowl with salt and black pepper.
  4. Spread the mashed avocado on toasted bread slices and top with roasted cherry tomatoes.
