  • 2 tbsp salted butter, room temperature
  • 1/2 cup packed dark brown sugar
  • 1/4 cup apple cider
  • 1 tsp salt
  • 1 honeycrisp apple, sliced and diced (optional)
  • 1 cup unsalted butter, room temperature
  • 1 cup brown sugar
  • 2 large eggs, room temperature
  • 1 tbsp vanilla extract
  • 2 cups all-purpose flour
  • 2 cups old-fashioned oats
  • 1 tsp baking soda
  • 3/4 cup powdered sugar
  • 1/3 cup maple syrup
  • 1 tbsp vanilla extract
  • Flaky sea salt, for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together room temperature butter and dark brown sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and apple cider.
  3. In another bowl, whisk together flour, oats, baking soda, and salt. Gradually incorporate this mixture into the wet ingredients until combined. If desired, fold diced honeycrisp apples into the dough.
  4. Drop spoonfuls of dough onto prepared baking sheets, spacing them about two inches apart. Bake for approximately 12–15 minutes or until golden brown around the edges.
  5. While cookies bake, prepare the glaze by mixing powdered sugar with maple syrup and vanilla extract until smooth.
  6. Once slightly cooled on wire racks, drizzle the glaze over cookies and finish with flaky sea salt.
