  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour

  • 4 large eggs
  • 1 cup pumpkin puree
  • 1/2 cup maple syrup
  • 1 cup heavy cream
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon agar-agar powder

Instructions

  1. Preheat oven to 400°F (200°C). In a saucepan, combine water and butter; heat until melted and boiling.
  2. Remove from heat, add flour and salt. Stir until it forms a ball. Let cool slightly, then mix in eggs one at a time until smooth.
  3. Pipe small mounds on lined baking sheets and bake for 20-25 minutes until golden brown. Cool completely.
  4. For the filling, mix pumpkin puree, maple syrup, spices, and agar-agar in a bowl. Whip heavy cream until stiff peaks form and fold into the pumpkin mixture.
  5. Fill cooled puffs with the cream mixture and serve.
