Huli Huli Chicken is a vibrant Hawaiian dish that brings the tropical flavors of the islands straight to your grill. Marinated in a sweet and savory blend of pineapple juice, soy sauce, and spices, this succulent chicken becomes the star of any summer gathering. The name ‘Huli Huli,’ meaning ‘turn turn’ in Hawaiian, refers to the frequent flipping of the chicken on the grill, ensuring a beautifully caramelized finish with each bite.

  • 2 1/2 pounds chicken thighs or drumsticks, bone-in and skin-on
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/3 cup brown sugar
  • 1/4 cup ketchup
  • 2 tablespoons rice vinegar (or apple cider vinegar)
  • 2 tablespoons vegetable oil
  • 1 tablespoon fresh ginger, grated
  • 3 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 1/4 teaspoon black pepper
  • 2 green onions, sliced (for garnish)
  • Pineapple slices, for serving (optional)

Instructions

  1. In a large bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, rice vinegar, vegetable oil, ginger, garlic, sesame oil, and black pepper. Reserve 1/2 cup of this marinade for basting later.
  2. Place the chicken in a large resealable bag or shallow dish. Pour in the remaining marinade until all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 4 hours or overnight to enhance flavor.
  3. Preheat your grill to medium-high heat. Lightly oil the grates to prevent sticking.
  4. Remove the chicken from the marinade and discard any leftover marinade. Grill each piece for 6–8 minutes per side. Baste frequently with reserved marinade until an internal temperature of 165°F (74°C) is reached and skin is caramelized.
