Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 1 tablespoon Cajun seasoning
  • 4 cloves garlic (minced)
  • 2 cups rotini pasta
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup Velveeta cheese (cubed)
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken, season with Cajun seasoning, garlic powder, onion powder, paprika, salt, and pepper. Cook until golden brown, about 6-8 minutes. Stir in butter and minced garlic; remove from pan.
  2. In the same pan, bring chicken broth to a simmer. Stir in rotini pasta, cover, and cook for about 10-12 minutes until tender.
  3. Reduce heat to low. Stir in heavy cream, Velveeta, and Parmesan cheese until fully melted and creamy.
  4. Add cooked chicken back to the pan; mix well to combine.
  5. Top with mozzarella cheese, cover for 2-3 minutes until melted.
  6. Garnish with chopped parsley before serving hot.
