  • 2 medium apples, peeled and diced
  • 3 tablespoons coconut sugar (or brown sugar)
  • ¼ cup chopped pecans
  • ½ cup dried cranberries
  • 2 tablespoons butter
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg

Instructions

  1. Preheat your oven to 425°F (218°C).
  2. Scrub and dry the sweet potatoes; prick them with a fork.
  3. Roast the sweet potatoes in a baking dish for 40-45 minutes until tender.
  4. While roasting, melt butter in a skillet over medium heat; sauté diced apples, cranberries, coconut sugar, cinnamon, and nutmeg until apples soften.
  5. Stir in chopped pecans and mix well.
  6. Once sweet potatoes are done, split them open and fluff the insides with a fork.
  7. Spoon the apple-cranberry filling into each half of the sweet potato.
