  • 1/3 cup molasses
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger (optional, for extra spice)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. In a bowl, whisk together flour, ginger, cinnamon, baking soda, cloves, nutmeg, and salt.
  3. In a large bowl, cream the softened butter with brown and granulated sugar until fluffy. Mix in molasses, egg, and vanilla.
  4. Gradually stir in dry ingredients until just combined.
  5. Spread the dough into the prepared pan and bake for 20–24 minutes or until a toothpick comes out clean. Allow to cool completely in the pan.
  6. For frosting: Beat cream cheese and butter until smooth; gradually add powdered sugar, vanilla extract, cinnamon, nutmeg, and optional ginger.
  7. Frost cooled bars evenly and cut into squares to serve.
