  • 1 lb boneless, skinless chicken breasts
  • 12 oz rotini pasta
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp Cajun seasoning, adjust to taste
  • Salt and black pepper, to taste

Instructions

  1. 1. Boil salted water in a large pot and cook the rotini until al dente (9-10 minutes). Reserve 1/2 cup pasta water, drain, and set aside.
  2. 2. In a skillet, heat olive oil and 1 tbsp butter over medium-high heat. Season chicken with Cajun seasoning, salt, and pepper; sear for 7-8 minutes until golden brown. Add half the minced garlic in the last minute.
  3. 3. Remove chicken; add remaining butter and garlic to the skillet. Sauté until fragrant.
  4. 4. Pour in heavy cream; simmer for 2-3 minutes. Stir in cheeses until melted.
  5. 5. Combine cooked rotini with sauce; adjust consistency with reserved pasta water if needed.
  6. 6. Serve hot, garnished with parsley.
