  • 12 oz rotini pasta
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Cajun seasoning
  • Salt
  • Black pepper
  • Italian seasoning
  • Red pepper flakes

Instructions

  1. Boil salted water in a large pot and cook rotini until al dente (about 9-10 minutes). Reserve ½ cup of pasta water before draining.
  2. Season chicken with Cajun seasoning, salt, and pepper.
  3. In a skillet over medium-high heat, heat olive oil and 1 tablespoon butter. Sear chicken for 7-8 minutes until golden; add half the garlic in the last minute.
  4. Lower heat and add remaining butter and garlic to the same skillet. Sauté until fragrant.
  5. Stir in heavy cream and simmer for 2-3 minutes to thicken.
  6. Add mozzarella and Parmesan; mix until melted into a creamy sauce.
  7. Combine cooked rotini with the sauce, adding reserved pasta water if needed for consistency.
