  • 56 medium sweet potatoes (peeled & cut into thin medallions)
  • ¼ cup unsalted butter (or substitute)
  • ¼ cup brown sugar
  • ½ cup water
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ¼ cup chopped pecans (or walnuts)
  • ½ cup mini vegan marshmallows

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and slice sweet potatoes into thin medallions.
  3. Arrange sweet potato medallions in a baking dish.
  4. In a saucepan, combine butter, brown sugar, water, cinnamon, cloves, nutmeg, and salt over medium heat until melted.
  5. Brush three-quarters of the sauce over the sweet potatoes and cover with foil.
  6. Bake for 45-50 minutes.
  7. Remove foil, drizzle remaining sauce over the potatoes, and top with pecans and mini vegan marshmallows.
  8. Broil for 1-2 minutes until marshmallows are toasted.
  9. Allow cooling for 10-15 minutes before serving.
