  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 can (14 oz) full-fat coconut milk
  • 1/2 cup beef broth

Instructions

  1. Heat vegetable oil in a heavy-bottomed pot over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Stir in garlic and ginger; cook for another minute until fragrant.
  2. Mix in red curry paste along with cumin, coriander, turmeric, cinnamon, and optional cayenne pepper. Toast spices for 2-3 minutes.
  3. Add beef chunks to the pot, stirring to coat them in the spice mixture. Brown on all sides for about 5-7 minutes.
  4. Pour in coconut milk and beef broth; bring to a gentle simmer. Cover and reduce heat to low. Cook for at least 1.5 to 2 hours or until the beef is fork-tender.
